Slow Cooker Potato Bacon Soup



Enjoy the hearty and comforting flavors of this Potato Bacon Soup made in a slow cooker. A hearty and satisfying meal that's great for any occasion is made with mashed potatoes, bacon, and melted cheddar cheese.

Ingredients:

  • 6 slices bacon, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions:

Cook diced bacon in a pan until it gets crispy

Take it off and let it dry on paper towels

Put chopped onion and minced garlic in the same pan and cook them until they get soft

Put the bacon, onion, and garlic that have been cooked into a slow cooker

Put chicken broth and diced potatoes in the slow cooker

Use a stir to mix

Set the timer for 6 to 8 hours on low or 3 to 4 hours on high

Cover and cook until the potatoes are soft

Blend the soup with an immersion blender until it is smooth and creamy

Add heavy cream and cheddar cheese shreds and mix until the cheese melts

Add pepper and salt to taste

Beer Bean and Cotija Stuffed Poblanos



Spicy poblano peppers packed with a tasty blend of corn, cotija cheese, black beans, and quinoa, enhanced by the richness of beer. An excellent and filling dish for a fun dinner.

Ingredients:

  • 4 large poblano peppers
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1 cup corn kernels
  • 1/2 cup diced red onion
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup crumbled cotija cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup beer your choice
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions:

Set oven temperature to 375F 190C

Peel the seeds and membranes from poblano peppers by cutting them in half lengthwise

Black beans, quinoa, corn, red onion, tomatoes, cilantro, cotija cheese, cheddar cheese, beer, garlic, cumin, chili powder, salt, and pepper should all be combined in a big bowl

Blend thoroughly

Gently press the filling into each poblano half after stuffing it with the bean mixture

After placing the filled poblanos on a baking sheet and brushing them with olive oil, bake them for 25 to 30 minutes, or until the peppers become soft

Optional: To brown the cheese on top, broil for a further two to three minutes

Before serving, take out of the oven and allow to cool for a few minutes

If desired, garnish with additional cilantro and cotija cheese

Elephant Baby Shower Cookies

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar

  • 1 teaspoon vanilla extract
  • Blue food coloring
  • Royal icing for decorating

Instructions:

Mix the flour, baking powder, and salt together in a bowl with a whisk

Melt the butter and mix it with the sugar in a different bowl until it is light and fluffy

Add the egg and vanilla extract and mix them in well

Mix the dry ingredients into the wet ingredients one at a time until a dough forms

Split the dough in half

One half should be kneaded while blue food coloring is added until the right shade is reached

Put both halves of the dough in the fridge for at least an hour after you wrap them in plastic wrap

Set the oven to 350F 175C and heat it up

To make the dough about 1/4 inch thick, roll out each half on a floured surface

Cut out elephant-shaped cookies from the blue and plain dough with cookie cutters

Put the cookies with the shapes cut out of them on a baking sheet that has parchment paper on it

After the oven is hot, bake for 8 to 10 minutes, or until the edges are just beginning to turn golden

Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way

Once the cookies are completely cool, use royal icing to add small details and designs to the elephant shapes

Before you serve or package the cookies, let the frosting dry and set

Instructions:

Warm the grill up to a medium-high level

Blend the tofu into small pieces and mix them with the curry powder, soy sauce, and maple syrup in a bowl

Put the mixed vegetables on skewers and use vegetable oil to brush them

For about 8 to 10 minutes, turning the vegetables every now and then, grill them until they are slightly charred and soft

Warm up the vegetable oil in a big pan over medium-low heat

Put in the minced garlic and diced onion and saut until the onion is soft

Put the tofu that has been marinated in the pan and cook it for 5 to 7 minutes, until it turns golden brown

Then add the coconut milk and mix it in

Turn the heat down to low and let it cook for five more minutes

This will give the flavors time to blend

Add pepper and salt to taste

On the side, serve the curry with grilled vegetables

If you want, you can top it with fresh cilantro
