Curry With Tofu and Grilled Vegetables



This vegan curry with grilled vegetables and tofu is full of flavor and good for you. When you mix creamy coconut milk, fragrant curry powder, and soft tofu, you get a hearty and satisfying dish. The vegetables get smoky when they are grilled, which makes the curry a great dish for any event.

Ingredients:

  • 300g tofu, diced
  • 2 cups mixed vegetables such as bell peppers, zucchini, and mushrooms, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can 400ml coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Instructions:

Warm the grill up to a medium-high level

Blend the tofu into small pieces and mix them with the curry powder, soy sauce, and maple syrup in a bowl

Put the mixed vegetables on skewers and use vegetable oil to brush them

For about 8 to 10 minutes, turning the vegetables every now and then, grill them until they are slightly charred and soft

Warm up the vegetable oil in a big pan over medium-low heat

Put in the minced garlic and diced onion and saut until the onion is soft

Put the tofu that has been marinated in the pan and cook it for 5 to 7 minutes, until it turns golden brown

Then add the coconut milk and mix it in

Turn the heat down to low and let it cook for five more minutes

This will give the flavors time to blend

Add pepper and salt to taste

On the side, serve the curry with grilled vegetables

If you want, you can top it with fresh cilantro
