Baked Samosas with Chickpea Filling - Holy Cow! Vegan Recipes



Enjoy these delicious baked samosas with a flavorful chickpea filling, perfect for a vegan snack or appetizer. These samosas are a healthier alternative to traditional deep-fried ones, and they are bursting with Indian spices and flavors.

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil
  • 1/2 teaspoon salt
  • Water, as needed
  • 2 cups cooked chickpeas
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon chili powder adjust to taste
  • Salt, to taste
  • 2 tablespoons vegetable oil
  • 2 tablespoons fresh coriander leaves, chopped

Instructions:

In a mixing bowl, combine the all-purpose flour, 1/4 cup vegetable oil, and 1/2 teaspoon salt

Gradually add water and knead until you have a smooth dough

Cover it with a damp cloth and let it rest for 30 minutes

Heat 2 tablespoons of vegetable oil in a pan over medium heat

Add the cumin seeds and let them sizzle for a few seconds

Add the finely chopped onion and saut until it becomes translucent

Stir in the minced garlic and grated ginger

Saut for another couple of minutes until the raw smell disappears

Add the coriander powder, turmeric powder, garam masala, chili powder, and salt

Mix well and cook for a minute or two to toast the spices

Add the cooked chickpeas to the spice mixture

Mash some of the chickpeas while leaving some whole for texture

Cook for 5-7 minutes, stirring occasionally, until everything is well combined and heated through

Remove the mixture from heat and stir in the chopped fresh coriander leaves

Let it cool

Preheat your oven to 375F 190C

Divide the rested dough into small portions and roll each portion into a thin oval or circular shape

Cut each rolled dough into two halves to create semi-circles

Take one semi-circle of dough, fold it in half to form a cone, and seal the edge using a little water

Stuff the cone with the chickpea filling and seal the top edge to create a triangle-shaped samosa

Repeat this process for the remaining dough and filling

Place the samosas on a baking sheet lined with parchment paper

Bake the samosas in the preheated oven for 20-25 minutes, or until they turn golden brown and crisp

Serve hot with your favorite dipping sauce or chutney
