This Butternut Squash, Leek, and Stilton Tart is a delightful combination of sweet squash, savory leeks, and tangy Stilton cheese, all nestled in a flaky puff pastry crust. Perfect for a cozy dinner or a special occasion.
Ingredients:
- 1 sheet of pre-made puff pastry
- 1 small butternut squash, peeled, seeded, and thinly sliced
- 2 leeks, washed and sliced
- 100g Stilton cheese, crumbled
- 2 eggs
- 150ml heavy cream
- Salt and pepper to taste
- Fresh thyme leaves for garnish
Instructions:
Warm the oven up to 400F 200C
Line a tart pan with the puff pastry sheet and cut off any extra
Cook leeks in a skillet until they are soft and start to turn a little caramelized
Put the sliced butternut squash on top of the pastry base
Then add the caramelized leeks and crumbled Stilton cheese
Whisk the eggs and heavy cream together in a bowl
Add pepper and salt
Put the egg mix on top of the filling for the tart
After the oven is hot, bake for 25 to 30 minutes, or until the filling is set and the pastry is golden
Before serving, sprinkle with fresh thyme leaves
