Ingredients:
- 1 cup quinoa, cooked
- 1 cup rolled oats
- 1/2 cup almonds, chopped
- 1/2 cup dried cranberries
- 1/4 cup honey
- 1/4 cup almond butter
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions:
Preheat oven to 350F 175C and line a baking dish with parchment paper
In a large bowl, combine cooked quinoa, rolled oats, chopped almonds, and dried cranberries
In a small saucepan, heat honey, almond butter, and melted coconut oil over low heat until well combined
Remove from heat and stir in vanilla extract, cinnamon, and salt
Pour the wet mixture over the dry ingredients and mix until everything is well coated
Transfer the mixture to the prepared baking dish, pressing it down firmly to create an even layer
Bake in the preheated oven for 20-25 minutes or until the edges are golden brown
Allow the granola bars to cool completely before cutting into bars
Store in an airtight container for a delicious and nutritious snack on the go!
