- 4 cups unsweetened shredded coconut
Instructions:
Set the oven temperature to 175C 350F
Arrange the coconut shreds uniformly on a baking sheet
With periodic stirring, toast the coconut in the preheated oven for five to seven minutes, or until it turns a light golden brown
Place the toasted coconut in a high-speed blender or food processor
For ten to fifteen minutes, on high speed, blend the coconut, scraping down the sides as needed, until a smooth and creamy butter consistency is achieved
