Ingredients:
- 2 large sweet potatoes, baked and mashed
- 1 cup gluten-free all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh lemon zest
- 1/4 cup BBQ sauce
- 2 tablespoons olive oil
- Chopped fresh parsley for garnish
Instructions:
Mash the sweet potatoes and add the gluten-free flour, Parmesan cheese, beaten egg, salt, and black pepper
Mix everything together in a large bowl
Mix until you get a dough
Break the dough up into smaller pieces, and then roll each piece into a long rope
To make the gnocchi, cut the rope into small pieces
Put salt in a big pot and bring it to a boil
Do not stop cooking the gnocchi until they float to the top, which means they are done
Fork-out the food and set it aside
Warm the olive oil in a pan over medium heat
Put in the cooked gnocchi and cook until it gets a little brown
Add the BBQ sauce to the gnocchi and toss it around to cover it all
Add more BBQ flavor and cook for another two to three minutes, until the gnocchi are caramelized
Add the lemon zest to the gnocchi and mix it all together
Add one more minute of cooking to let the flavors mix
Hot gluten-free sweet potato gnocchi with BBQ zest and lemons should be served with chopped fresh parsley on top
