Ingredients:
- 1 lb ground pork sausage
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 4 cloves garlic, minced
- 1 can 14
- 5 oz diced tomatoes
- 1 can 4 oz diced green chilies
- 1 cup beef broth
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 4 large eggs
- Fresh cilantro, chopped for garnish
Instructions:
In a large skillet over medium heat, cook the ground pork sausage until browned and no longer pink, breaking it apart with a spoon as it cooks
Add the diced onion, bell pepper, and minced garlic to the skillet
Cook until the vegetables are tender
Stir in the diced tomatoes, diced green chilies, beef broth, ground cumin, chili powder, paprika, salt, and pepper
Bring to a simmer and let it cook for 10-15 minutes, allowing the flavors to meld together
While the chili is simmering, fry the eggs in a separate skillet to your desired doneness
Once the chili is ready, serve it hot in bowls, topping each serving with a fried egg and chopped fresh cilantro
