Quick and Easy Kung Pao Chicken



Quick and easy chicken dish that tastes great and is spicy!

Ingredients:

  • 1 lb chicken thighs, diced
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/4 cup peanuts
  • 2 tbsp vegetable oil
  • 1 bell pepper, diced
  • 2 green onions, sliced for garnish

Instructions:

In a bowl, mix soy sauce, hoisin sauce, rice vinegar, honey, garlic, and ginger

Heat vegetable oil in a skillet over medium-high heat

Add diced chicken and cook until browned

Add diced bell pepper and peanuts, cook until peppers are tender

Pour the sauce mixture over the chicken and vegetables

Cook until sauce thickens and coats the chicken

Garnish with sliced green onions before serving

Pina Colada Smoothie

Ingredients:

  • 1 cup frozen pineapple chunks
  • 1/2 cup coconut milk
  • 1/2 cup Greek yogurt
  • 2 tablespoons honey
  • 1/2 cup ice cubes
  • 1/4 cup white rum optional
  • Pineapple slices and maraschino cherries for garnish

Instructions:

In a blender, put the frozen pineapple chunks, coconut milk, Greek yogurt, honey, and ice cubes

For an alcoholic twist, you can add the white rum if you want to

Mix until it's creamy and smooth
