Ingredients:
- 1 lb chicken thighs, diced
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 2 tbsp rice vinegar
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1/4 cup peanuts
- 2 tbsp vegetable oil
- 1 bell pepper, diced
- 2 green onions, sliced for garnish
Instructions:
In a bowl, mix soy sauce, hoisin sauce, rice vinegar, honey, garlic, and ginger
Heat vegetable oil in a skillet over medium-high heat
Add diced chicken and cook until browned
Add diced bell pepper and peanuts, cook until peppers are tender
Pour the sauce mixture over the chicken and vegetables
Cook until sauce thickens and coats the chicken
Garnish with sliced green onions before serving
